Barbecued Beef Recipe

Prep time: 20 minutes
+ 30 minutes freezing
+ 2 hours marinating
Cooking time: 15 minutes
Serves 4-6

Barbecued Beef Ingredients:

500g scotch fillet or sirloin steak
2 garlic cloves, chopped finely
1/4 cup sesame seeds
1/2 cup shoshoyu (Japanese soy sauce)
3 spring onions, chopped finely
1 tbsp sesame oil
1 tbsp oil

Barbecued Beef Cooking Instructions:

1. Freeze the steak for 30 minutes to make it easy to slice thinly. Dry-fry the sesame seeds over low heat for 3-4 minutes. Shake the pan gently until seeds are golden. Remove seeds from the pan and allow to cool. Grind in a food processor or with a mortar and pestle.

2. Slice the steak into thin strips, cutting across the grain. Combine meat, shoshoyu, garlic, spring onion and half of the crushed seeds in a bowl. Toss until the meat is well coated with the sauce. Cover and marinate for 2 hours in the refrigerator.

3. Combine the two oils and brush some on the cast iron grill pan, heavy-based frying pan or barbecue plate. Heat to a very hot level and cook the meat in batches. Sear each side for about 1 minute (don’t overcook). Oil and reheat the grill between batches. Serve steak with the remaining crushed seeds and with pickled cabbage or Kim Chi.

Thai Fish Cakes Recipe

Cooking time: 10 minutes
Serves 4-6

Thai Fish Cakes Ingredients:

450g firm white boneless fish fillets
3 tbsp rice flour or cornflour
1 beaten egg
1 tbsp fish sauce
3 tsp red curry paste
1/2 cup fresh coriander leaves
100 g green beans, very finely sliced
1-2 tsp chopped red chillies, optional
2 spring onions, finely chopped
1/2 cup oil for frying
dipping sauce or bottled sweet chilli sauce

Thai Fish Cakes Cooking Instructions:

1. Process the fish in a food processor for 20 seconds or until smooth. Add the rice flour, fish sauce, beaten egg, coriander leaves, curry paste and chillies, if desired. Process for 10 seconds or until well combined. Transfer the fish mixture in a large bowl then add the green beans and spring onions. Mix thoroughly.

2. Form two tablespoons of the fish mixture at a time into flattish patties using wet hands.

3. Heat the oil in a heavy-based frying pan over a medium heat and then cook the formed four fish cakes at a time until they are golden brown on both sides. Drain on kitchen towel and serve immediately with your choice of dipping sauce.

Spicy Bison Burgers Recipe

Keep the heat low and burgers juicy.

Serves 6

Spicy Bison Burgers Ingredients:

1 1/2 lb lean ground bison
1 egg
1/2 cup onion, chopped finely
1 jalapeno pepper, finely chopped
1 garlic clove, finely chopped
1/2 cup rolled oats

Spicy Bison Burgers Cooking Instructions:

1. Mix ingredients together. Shape into 6 patties about half an inch thick.

2. Coat nonstick skillet with cooking oil over medium heat. Cook patties for 4 minutes on each side, or until desired doneness.

3. Serve on crusty whole grain rolls with sliced onion and tomato.
