Barbecue Jerk Chicken Recipe
This barbecue chicken is blended with herb and spice seasoning rubbed into the meat before it is roasted over charcoal sprinkled with pimiento berries.
Serves 4
Barbecue Jerk Chicken Ingredients:
8 chicken pieces
For the marinade
1 tsp ground allspice
salad leaves, to serve
1 tsp ground cinnamon
1 tsp dried thyme
Salt
Ground black pepper
1 hot chilli chopped
1 tbsp lime juice
1/4 tsp freshly grated nutmeg
2 tsp raw sugar
2 garlic cloves, crushed
1 tbsp finely chopped onion
1 tbsp chopped spring onion
1 tbsp vinegar
2 tbsp oil
Barbecue Jerk Chicken Cooking Instructions:
1. Combine all the marinade ingredients in a small bowl. Mash the ingredients together well to form a thick paste using a fork.
2. Place the chicken pieces on a plate or board and make several lengthwise slits on the flesh. Rub the seasoning all over the chicken and into the slits.
3. Place the chicken pieces in a dish. Cover with clean film or plastic wrap and marinate overnight in the refrigerator.
4. Shake off any excess seasoning from the chicken. Brush with oil and either place on a baking sheet or on a barbecue grill. Cook under a preheated grill (broiler) for 45 minutes. Turn frequently. Or, for the barbecue, light the coals and when ready, cook over the coals for 30 minutes. Turn frequently. Serve hot with fresh salad leaves.
