Barbecued Garlic Chicken Recipe
This main dish is special for a dinner party. Served with salad, this dish is sure to bring back your appetite.

Serves 4
Barbecued Garlic Chicken Recipe Ingredients:
4 chicken breast fillets
6 cloves garlic, crushed
1 1/2 tablespoons cracked black peppercorns
1/2 cup chopped fresh coriander (cilantro) leaves and stem
4 coriander (cilantro) roots, chopped
1/3 cup lime juice
1 teaspoon soft brown sugar
1 teaspoon ground turmeric
2 teaspoons light soy sauce
Cucumber and Tomato Salad
1 small green cucumber, unpeeled
1 large egg tomato
1/4 small red onion, thinly sliced
1 small red or green chili, chopped finely
2 tablespoons coriander (cilantro) leaves
2 tablespoons lime juice
1 teaspoon soft brown sugar
1 tablespoon fish sauce
Barbecued Garlic Chicken Recipe Cooking Instructions:
1. Using a mortar and pestle or blender, blend the garlic, peppercorns, coriander, lime juice, sugar, turmeric and soy sauce until smooth then transfer to a bowl.
2. Remove tenderloins from the fillets. Score the top surface of each fillet three times. Add fillets and tenderloins to marinade and cover. Refrigerate for 2 hours minimum. Turn occasionally.
3. To make Salad: Halve the cucumber and scoop out the seeds with a teaspoon. Cut into slices. Halve the tomato lengthwise and slice.
4. Combine cucumber, tomato, onion, chilli and coriander. Drizzle with the combined lime juice, sugar and fish sauce. Cook the chicken on a lightly greased barbecue hotplate for 3 minutes each side or until tender. The tenderloins need less time to cook. Serve with salad.
