Baked Spiced Fish Cutlets Recipe

This baked spiced fish cutlets is famous among Indonesians, which is usually served with steamed white rice. The spice mixture can be made one day in advance refrigerated in an airtight container.

Prep time: 15 minutes
Cooking time: 15-20 minutes
Serves 4

Baked Spiced Fish Cutlets Ingredients:

4 small fish cutlets
2 tsp lemon grind, very finely grated
2 tsp tamarind concentrate
1 tbsp oil
1 onion, very finely chopped
2 cloves garlic, finely chopped
1 stem lemon grass, finely chopped (white part only)
1 tsp ground coriander
2 inch piece of fresh ginger, finely grated
lime wedges, to garnish

Baked Spiced Fish Cutlets Cooking Instructions:

1. Preheat the oven to warm. Line a baking dish or tray with aluminum foil. Lightly oil the aluminum foil to prevent the fish from sticking. Heat the oil in a frying pan then add the onion, garlic, ginger, coriander and lemon grass. Stir over medium heat for 5 minutes or until aroma is out.

2. Stir in the tamarind, lemon rind and some freshly ground black pepper. Remove from the heat and set aside to cool.

3. Spread the spice paste over the fish then arrange them in the dish in a single layer.

4. Bake the fish for 10-15 minutes or until the fish flakes when tested with a fork. Be sure not to overcook or it will be dry. Garnish with lime wedges and serve with steamed rice.

Serve these Indonesian meatballs with a sambal or a spicy sauce.

Makes 24

Spicy Meatballs Recipe Ingredients:

450g lean minced (ground) beef
1 large onion, coarsely chopped
1-2 fresh red chillies, seeded and chopped
2 crushed garlic cloves
1/2in cube shrimp paste
1 tablespoon coriander seeds
1 teaspoon cumin seeds
2 teaspoon dark soy sauce
1 teaspoon dark brown sugar
Juice of 1/2 lemon
A little beaten egg
Oil for shallow frying
Salt
Ground black pepper
Fresh coriander sprigs to garnish

Spicy Meatballs Recipe Cooking Instructions:

1. Put the onion, chillies, garlic and shrimp paste in a food processor. Process but do not over-chop or the onion will become too wet and spoil the consistency of the meatballs. Dry-fry the coriander and cumin seeds in a preheated pan for about 1 minute to release the aroma. Do not brown the seeds. Grind with a mortar and pestle.

2. Put the meat in a large bowl. Stir in the onion mixture. Add the ground coriander and cumin, soy sauce, seasoning, sugar and lemon juice. Bind with a little beaten egg and shape into small but evenly sized balls.

3. Chill the meatballs briefly to firm up, if necessary. Fry in shallow oil. Turn meatballs often until cooked through and browned. This normally takes about 4 to 5 minutes depending on the size of the meatballs.

4. Remove from the pan and drain well on a paper towel. Serve, garnished with coriander sprigs.

Serve these spicy little meatballs with broad egg noodles and fiery chilli sambal as a dipping sauce.

Serves 4-6

Beef Patties Recipe Ingredients:

1/2 in cube shrimp paste
1 large onion, roughly chopped
1-2 fresh red chillies, seeded and chopped
2 garlic cloves, crushed
1 tablespoon coriander seeds
1 teaspoon cumin seeds
450 g lean minced (ground) beef
2 teaspoons dark soy sauce
1 teaspoon soft dark brown sugar
Juice of 1 1/2 lemons
A little beaten egg
Vegetable oil for shallow frying
Salt and ground black pepper
1 fresh green and 1-2 fresh red chillies, to garnish

Beef Patties Recipe Cooking Instructions:

1. Wrap the shrimp paste in a piece of foil and gently warm it in a dry frying pan for 5 minutes, turning a few times. Unwrap the paste and put in a food processor or blender.

2. Add the onion, chillies and garlic to the food processor and process until finely chopped. Set aside. Dry-fry the coriander and cumin seeds in a hot frying pan for 1 minute to release the aroma. Tip the seeds into a mortar and grind with a pestle.

3. Put the meat in a large bowl. Stir in the onion mixture. Add the ground spices, soy sauce, brown sugar, lemon juice and beaten egg. Season to taste.

4. Shape the meat mixture into small, even-size balls, and chill these for 5-10 minutes to firm them up.

5. Heat the oil in a wok or large frying pan and fry the meatballs for 4-5 minutes, turning often, until cooked through and browned. You may have to do this in batches.

6. Drain the meatballs on a paper towel, and then pile them on to a warm serving platter or into a large serving bowl. Finely slice the green chilli and one of the red chillies, and sprinkle over the meatballs. Garnish with a whole red chilli, if desired.
