Chilli Crab Recipe

When serving, make sure to provide finger bowls for guests and a handy bibs as well.

Prep time: 55 minutes
Cooking time: 45 minutes
Serves 2-4

Chilli Crab Ingredients:

2 very fresh blue swimmer crabs of approximately 500g each
2 tbsp soy sauce
2 tbsp sweet chilli sauce
1 tbsp rice wine vinegar
2 tbsp soft brown sugar
1/2 cup flour
1/4 cup oil
1 cup water
2 cups ready-made tomato pasta sauce
3-5 red chillies, chopped finely
4 cloves of garlic, chopped finely
2 inch piece of fresh ginger, grated finely
1 medium onion, chopped finely
dipping sauce or bottled chilli or soy sauce

Chilli Crab Cooking Instructions:

1. Using a scourer, wash the crabs well and scrub the shells. Cut the crabs in half using a large cleaver. Rinse well under cold water while carefully removing the yellow gills or spongy parts. Hit the legs and larger front nippers with the flat side of the cleaver to crack the shells to make eating the meat inside easier.

2. Coat the crabs all over with flour and shake off any excess. Heat about 2 tablespoons of the oil in a large wok and cook one crab half at a time. Carefully turn and hold the crab in the hot oil until the shell turns red. Repeat with the remaining crab.

3. Add the remaining oil to the wok and then cook the onion, ginger, garlic and chillies. Cook these ingredients for 5 minutes over medium heat and stir regularly. Add the tomato sauce, water soy sauce, chilli sauce, vinegar and brown sugar. Bring to boil and cook for 15 minutes.

4. Return the crab to the wok and simmer turning carefully in the sauce for 8-10 minutes or until crab meat turns white. Do not overcook.

5. Serve with steamed rice and a choice of dipping sauce.

This Noodle Soup is widely eaten especially in Asia.

Prep time: 30 minutes
Cooking time: 30 minutes
Serves 4

Noodle Soup Recipe Ingredients:

300 g small cooked prawns
200 g baby spinach leaves
500 g fresh Shanghai noodles
1 tablespoon oil
1 large brown onion, finely chopped
2 inch piece of fresh ginger, grated
2 red chillies, chopped finely
1.5 liters chicken stock
2 tablespoons soy sauce
2 teaspoons soft brown sugar
6 spring onions, chopped
crisp fried garlic and onion, bean sprouts (scraggly ends removed), dried chilli flakes, chopped garlic chives, sugar, salt and pepper for serving

Noodle Soup Recipe Cooking Instructions:

1. Peel the prawns leaving the tails intact. Wash and drain the spinach and snap off any long stems. Set aside.

2. Add the noodles to the boiling water and cook for 3 minutes or until plump and tender. Drain and set aside. Heat the oil in a large pan. Add the onion and ginger and cook for 8 minutes over medium heat. Stir regularly.

3. Add the chillies, stock, soy sauce and sugar. Bring to boil while reducing the heat. Simmer for 10 minutes and add spring onion. Divide the noodles among large soup bowls, top with prawns and spinach leaves. Pour over the boiling stock and top with a selection of the garnishes. Serve immediately with any remaining garnishes to add to the guests taste.

Spare Ribs Recipe

There are a few Singaporean dishes as delicious as this Spare Ribs which can be served with steamed rice or java rice.

Prep time: 20 minutes + 4 hours marinating
Cooking time: 50 minutes
Serves 6

Singapore Spare Ribs Recipe Ingredients:

2 teaspoons sesame oil
1 teaspoon finely chopped fresh ginger
3 cloves garlic, crushed
2 tablespoons soy sauce
2 tablespoons Chinese rice wine
1/2 teaspoon five spice powder
2 tablespoons honey
1 teaspoon sambal oelek
1/2 teaspoon salt
1.5 kg pork spare ribs, cut into individual ribs and trimmed of excess fat
1 tablespoon chopped garlic chives
2 lemons, cut into wedges

Singapore Spare Ribs Recipe Cooking Instructions:

1. In a large glass bowl combine the sesame oil, ginger, garlic, soy sauce, rice wine, five spice powder, honey, sambal oelek and salt. Mix well.

2. Add the pork spare ribs and stir until the ribs are totally coated in the marinade. Cover and refrigerate overnight or for at least 4 hours to let absorb the flavor of the marinade.

3. Preheat the oven to a moderate 180 Degree Celsius. Place the ribs and marinade into an oiled baking dish and cook for 50 minutes, turning and basting with pan juices every 15 minutes. If the marinade begins to burn, add a few tablespoons of warm water to the pan during cooking.

4. Scatter the garlic chives over the spare ribs and serve with wedges of lemon and steamed rice.
