Savoury Spicy Rice Recipe
Savor the taste of this spicy rice. When serving, warn diners that these elaborate chilli “flowers” are hot and should be approached with caution.
Savoury Spicy Rice Ingredients:
1 3/4 cups of long grain white rice
1 chopped onion
1 lb tomato, peeled, seeded and coarsely chopped
2 chopped garlic cloves
4 tbsp corn or groundnut (peanut) oil
3 3/4 cups chicken stock
4-6 small red chillies
1 cup cooked green peas
salt and ground black pepper
fresh coriander (cilantro) sprigs, to garnish
Savoury Spicy Rice Cooking Instructions:
1.In a bowl of hot water, soak the rice for 15 minutes then drain and rinse well under cold running water. Drain again and set aside.
2. In a food processor, combine the onion, garlic and tomatoes and then process to a puree.
3. Heat the oil in a large frying pan then add the drained rice and saute until it is golden brown. Transfer the rice to a pan using a slotted spoon.
4. Reheat the remaining oil in the pan and cook the tomato puree for 2 to 3 minutes. Tip it into the rice pan and pour in the stock. Season to taste.
5. Bring to a boil while reducing heat to the lowest setting possible. Cover the pan and cook for 15-20 minutes or until almost all the liquid has been absorbed. Slice the red chillies from tip to stem end into four or five sections then place in a bowl of iced water until they curl back to form flowers, then drain.
6. Stir the peas into the rice mixture and cook. Do not cover until the liquid has been absorbed and the rice tender. Stir the mixture occasionally.
7. Transfer the rice to a serving dish and garnish with the drained chilli flowers and sprigs of coriander.
