Stir-Fried Mushrooms Recipe
Serve this stir-fried mushrooms as a side dish to accompany main courses and steamed rice.

Serves 4

Stir-Fried Mushrooms Ingredients:
200g button mushrooms cut in halves
2 cloves garlic
1 1/4 inch piece galangal
2 red chillies
1 tbsp oil
100g oyster mushrooms cut in halves
1 tbsp fish sauce
1 tsp soy sauce
1/2 cup chopped Thai basil
Stir-Fried Mushrooms Cooking Instructions:
1. Slice the galangal and chillies finely. Chop the garlic. Heat the oil in a wok or frying pan.
2. Add the galangal, garlic and chillies to the wok. Stir for 2 minutes then add the button mushrooms. Stir-fry for 2 minutes. Add the oyster mushrooms and cook for approximately 30 seconds. Toss constantly until the mushrooms begin to soften.
3. Add the fish sauce, soy sauce and chopped basil. Toss well. Serve immediately.
