Stir-Fried Mushrooms Recipe

Serve this stir-fried mushrooms as a side dish to accompany main courses and steamed rice.

Prep time: 10 minutes
Cooking time: 6 minutes
Serves 4

Stir-Fried Mushrooms Ingredients:

200g button mushrooms cut in halves
2 cloves garlic
1 1/4 inch piece galangal
2 red chillies
1 tbsp oil
100g oyster mushrooms cut in halves
1 tbsp fish sauce
1 tsp soy sauce
1/2 cup chopped Thai basil

Stir-Fried Mushrooms Cooking Instructions:

1. Slice the galangal and chillies finely. Chop the garlic. Heat the oil in a wok or frying pan.

2. Add the galangal, garlic and chillies to the wok. Stir for 2 minutes then add the button mushrooms. Stir-fry for 2 minutes. Add the oyster mushrooms and cook for approximately 30 seconds. Toss constantly until the mushrooms begin to soften.

3. Add the fish sauce, soy sauce and chopped basil. Toss well. Serve immediately.

This is a quick and easy to prepare chicken dish with fiery chillies partnering the holy basil that gives a pungent spicy flavor.

Serves 4-6

Stir-Fried Chicken With Chilli And Basil Recipe Ingredients:

450g skinless, boneless chicken breast portions
4 garlic cloves, sliced thinly
3 tablespoons vegetable oil
2-4 fresh red chillies, seeded and finely chopped
2 teaspoons dark soy sauce
3 tablespoons Thai fish sauce
1 teaspoon granulated sugar
2 fresh red chillies, seeded and finely chopped, to garnish
10-12 holy basil leaves
About 20 deep-fried holy basil leaves, to garnish

Stir-Fried Chicken With Chilli And Basil Recipe Cooking Instructions:

1. Cut the chicken breasts into bite-size pieces. Heat oil in the wok and add the garlic and chillies. Stir-fry over a medium heat for 1-2 minutes until the garlic is golden brown. Do not let the garlic burn or it will taste bitter.

2. Add the chicken pieces to the wok then stir-fry until color changes. Stir in the fish sauce, soy sauce and sugar. Stir-fry the mixture for 3-4 minutes or until the chicken meat is fully cooked.

3. Stir in the fresh basil leaves. Spoon the mixture onto a warm serving platter or individual serving dishes. Garnish with the chopped chillies and deep-fried basil. Serve immediately.

Try this spicy chilli prawns as a wonderful addition to any outdoor or indoor meal. You can put less chilli to make it less spicy. This is perfect for a dinner party and can be served with rice or crusty bread.

Prep time: 20 minutes + overnight marinating
Total cooking time: 5 minutes
Serves 4

Spicy Chilli Prawns Recipe Ingredients:

20-24 raw prawns, unpeeled
crusty bread and lemon wedges to serve

Marinade:

1 small red onion, finely chopped
1/2 cup olive oil
1 tablespoon grated lime or lemon rind
1/2 cup lime or lemon juice
2-3 cloves garlic, crushed
2-3 small red chillies, seeded and finely chopped
1 tablespoon grated fresh ginger
1 stem lemon grass, white part only and finely chopped
1 teaspoon ground turmeric

Spicy Chilli Prawns Recipe Cooking Instructions:

1. Place the prawns in a large glass or ceramic bowl. Pour in the combined marinade ingredients. Toss well to combine. Cover and refrigerate overnight. Turn the prawns once or twice while marinating.

2. Drain the prawns, reserving the marinade. Heat the wok until very hot and stir-fry the prawns in three batches over high heat until they are pink and very crispy. Remove all of the prawns from the wok.

3. Pour the reserved marinade into the wok. Bring to the boil, then return the prawns to the wok and toss until well combined. Season well with salt and pepper. Serve immediately with crusty bread and lemon wedges.
