Hot Noodles Recipe
Serve this hot noodles with rice crackers, if desired. For variations, use oyster or shiitake mushrooms or use chopped bok choy in place of mangetout.
Hot Noodles Recipe Ingredients:
8 oz dried egg noodles
5 1/2 oz sliced mushrooms
2 tablespoons vegetable oil
1 red pepper, seeded and cut into strips
5 1/2 oz carrots, cut into matchsticks
7 oz fresh beansprouts
6 spring onions, sliced into rings
5 1/2 oz mangetout, trimmed
1 tablespoon curry powder
A little ground cumin
Salt to taste
1 teaspoon oriental chilli sauce or any chilli sauce
3 tablespoons soy sauce
Hot Noodles Recipe Cooking Instructions:
1. Cook the noodles according to the instructions on the packet until tender. Drain and keep warm.
2. Heat the oil in a wok or large frying pan over high heat. Add the mushrooms and stir-fry for 1 minute.
3. Add the carrots, pepper and beansprouts and stir-fry for 3 minutes. Add the mangetout and spring onions and stir-fry for 1 minute.
4. Season the vegetable mixture with curry powder, cumin and salt then stir in the oriental chilli sauce and soy sauce.
5. Stir for another 1 minute. Add the noodles to the pan and stir until heated through. Serve immediately while hot.
