Spicy Holy Basil Chicken and Chilli Recipe

Vegetarians can use mushrooms, long or green beans, snow peas, and onions to replace the chicken. And for non-vegetarians you can use beef, pork, fish or shellfish instead of chicken.

Spicy Holy Basil Chicken and Chilli Recipe Ingredients:

1 1/2 tablespoons vegetable oil
1 peeled garlic clove pounded with 1 fresh red chilli to make a paste
7 oz boneless, skinless chicken breast portions, sliced thinly along the grain
3 oz onion, peeled and sliced
1 1/2 tablespoons fish sauce
1 teaspoon white sugar
1/2 teaspoon dark soy sauce
2 1/2 tablespoons chicken stock or water
1 fresh red chilli, sliced lengthwise
10 holy basil leaves

Serves 4

Spicy Holy Basil Chicken and Chilli Recipe Cooking Instructions:

1. Heat the oil in a wok over medium heat. Add the crushed garlic and chilli and stir around for 10 seconds. Add the chicken slices and continue stir-frying, constantly tossing and turning, for 1-2 minutes until they are half-cooked.

2. Add the onion and stir-fry for about 10 to 15 seconds. Season with the fish sauce, sugar, and soy sauce. Continue stirring.

3. Add the stock or water. Stir in the chiles and basil leaves. Stir-fry for another 10 to 15 seconds. The dish is now ready to serve.
