Spicy Masala Chicken Recipe

These spicy chicken pieces are grilled and have a sweet-and-sour taste, which can be served cold with a salad and rice. It can also be served hot with masala mashed potatoes.

Serves 6

Spicy Masala Chicken Recipe Ingredients:

12 chicken thighs
1 teaspoon ginger pulp
6 tablespoons lemon juice
1 teaspoon garlic pulp
1 teaspoon salt
1 teaspoon crushed dried red chillies
1 teaspoon soft brown sugar
2 tablespoons clear honey
2 tablespoons vegetable oil
Fresh coriander sprigs to garnish
2 tablespoons chopped fresh coriander
1 fresh green chilli, chopped finely

Spicy Masala Chicken Recipe Cooking Instructions:

1. Prick all the chicken thighs with a fork. Rinse them and pat dry. Set aside in a bowl.

2. Mix together the lemon juice, ginger, garlic, crushed dried red chillies, salt, sugar and honey in a large mixing bowl.

3. Place the chicken thighs to the spice mixture and coat well. Set aside for about 45 minutes.

4. Preheat the grill or boiler to medium. Add the fresh coriander and chopped green chilli to the chicken thighs and place them in a flameproof dish.

5. Pour any remaining marinade over the chicken and baste with the oil, using a pastry brush.

6. Grill (broil) the chicken thighs under the preheated grill for 15-20 minutes. Turn and baste occasionally until cooked through and browned.

7. Transfer to a serving dish and garnish with the fresh coriander sprigs.
