Spicy Peanut Balls Recipe
These tasty rice balls rolled in chopped peanuts and deep fried make a delicious snack. Serve as they are or with a chilli sauce for dipping.
Makes 16
Spicy Peanut Balls Recipe Ingredients:
1 garlic clove, crushed
1/2 inch of fresh root ginger, peeled and finely chopped
1 small fresh red chilli, seeded and roughly chopped
1/4 teaspoon ground turmeric
1 teaspoon granulated sugar
1/2 teaspoon salt
1 teaspoon chilli sauce
Juice of 1/2 lime
2 teaspoons soy sauce
2 tablespoons chopped fresh coriander or cilantro
2 cups of cooked white long grain rice
1 cup of chopped peanuts
Vegetable oil for deep frying
Lime wedges and chilli dipping sauce to serve, if desired
Spicy Peanut Balls Recipe Cooking Instructions:
1. Put the crushed garlic, ginger and chilli in a food processor then add the turmeric and process to a paste. Add the granulated sugar, salt, chilli sauce and soy sauce with the chopped coriander and lime juice. Process briefly to mix.
2. Add three quarters of the cooked rice to the paste in the food processor and process until smooth and sticky. Scrape into a mixing bowl and stir in the remainder of the rice. Wet your hands and shape the mixture into small balls.
3. Roll the balls, a few at a time, in the chopped peanuts. Make sure they are evenly coated.
4. Heat the oil for deep frying to 180-190 Degrees Celcius or until a cube of day-old bread browns in about 45 seconds. Deep fry the peanut balls until crisp. Drain on kitchen paper then pile on to a platter. Serve while hot with lime wedges and a chilli dipping sauce, if desired.
