Spicy Peanut Soup Recipe
Widely eaten in Africa, this Groundnuts (peanuts) are spiced with a mixture of fresh ginger and chilli powder. The amount of chilli powder can be varied according to taste. Add more for a fiery hot soup.

Spicy Peanut Soup Recipe Ingredients:
3 tablespoons pure groundnut (peanut) paste or peanut butter
6 1/4 cups stock or water
2 tablespoons tomato puree (paste)
1 onion, chopped
2 slices of fresh root ginger
1/2 teaspoon dried thyme
1 bay leaf
Salt and chilli powder
225 g white yam, diced
10 small okra, trimmed
Spicy Peanut Soup Recipe Cooking Instructions:
1. Place the peanut paste or peanut butter in a bowl. Add 1 1/4 cups of the stock or water and the tomato puree. Blend together to make a smooth paste.
2. Spoon the nut mixture into a pan and add the onion, ginger, thyme, bay leaf, salt, chilli and the remaining stock.
3. Heat gently until simmering, then cook for 1 hour. Stir occasionally adding the yam. Cook for 10 minutes.
4. Add the okra and simmer until tender. Serve immediately.
