Spicy Pork Salad Recipe

Serves 4-6

Spicy Pork Salad Ingredients:
500g lean minced (ground) pork or beef
2 stems lemon grass (white parts only)
2 fresh green chillies
1 tbsp oil
1/4 cup lime juice
2 tsp finely grated lime zest
2-6 tsp chilli sauce or commercial sauce
lettuce leaves for serving
25g crisp fried garlic
1/3 cup coriander (cilantro) leaves
1/4 cup small mint leaves
1 small red onion, finely sliced
1/3 cup roasted peanuts, chopped
Spicy Pork Salad Cooking Instructions:
1. Finely chop the green chillies and then slice the lemon grass very finely using a sharp knife.
2. Heat the oil in a wok or frying pan. Add the lemon grass, chillies and minced pork to wok. Stir-fry the meat, breaking up the lumps as it cooks using a wooden spoon or fork, over high heat for 6 minutes or until cooked through. Transfer to a bowl and allow to cool.
3. Add lime juice, zest and the chilli sauce to cooled meat. Arrange lettuce leaves on a serving plate. Stir most of the coriander and mint leaves, onion, peanuts and fried garlic through the meat mixture. Distribute over lettuce and sprinkle the rest of the leaves, onion, peanuts and garlic over the top.
