Spicy Roasted Eggplant With Tofu Recipe

Use only two chillies for a milder or less spicy dish.

Serves 4

Spicy Roasted Eggplant With Tofu Recipe Ingredients:

4 small lady-finger eggplants, 400 g
250 g silken tofu or soft bean curd
2-4 small fresh red or green chillies
4 cloves garlic, crushed
4 coriander (cilantro) roots, chopped
1 small brown onion, chopped
3 teaspoons soft brown sugar
2 tablespoons lime juice
2 tablespoons fish sauce
1 tablespoon oil
1/2 cup Thai basil leaves
2 teaspoons dried shrimp, finely chopped, optional

Spicy Roasted Eggplant With Tofu Recipe Cooking Instructions:

1. Heat a medium frying pan or wok until hot. Add the eggplant and cook until the skin begins to char. Turn to cook all sides. Remove from the heat and cool. Slice eggplant diagonally into 3/4 inch thick slices. Drain tofu and cut into 1 1/4 inch cubes.

2. Using a food processor or a blender, blend the chillies, garlic, coriander roots, onion, sugar, lime juice and fish sauce until smooth.

3. Heat the oil in the same pan or wok. Add the paste and stir over high heat for 1 minute or until fragrant. Add the eggplant, stir to combine and cook, covered, for 3 minutes or until just tender.

4. Add half the basil leaves and the tofu. Stir through gently. If desired, serve garnished with remaining basil leaves and dried shrimp.
