Spicy Sichuan Noodles Recipe
This flame-filled spicy sichuan noodles is a favorite dish for Chinese.
Spicy Sichuan Noodles Recipe Ingredients:
350g thick noodles
175g cooked chicken, shredded
1/2 cup roasted cashew nuts
For the dressing
4 spring onions, chopped
2 tablespoons chopped coriander
2 garlic cloves, chopped
2 tablespoons smooth peanut butter
2 tablespoons sweet chilli sauce
1 tablespoon soy sauce
1 tablespoon sherry vinegar
1 tablespoon sesame oil
2 tablespoons olive oil
2 tablespoons chicken stock or water
10 roasted Sichuan ground peppercorns
Spicy Sichuan Noodles Recipe Cooking Instructions:
1. Cook the noodles in a pan of boiling water until just tender (follow directions on the packet). Drain and rinse under cold running water. Drain well.
2. While the noodles are cooking, combine all the ingredients for the dressing in a large bowl and whisk together well.
3. Add the noodles, chicken and nuts to the dressing. Toss gently to coat and season to taste. Serve immediately while hot.
