Spicy Tomato and Pea Soup Recipe

This spicy tomato and pea soup is most popular in India and Pakistan which can be served with hot toasted chapattis brushed with ghee.

Prep time: 15 minutes
Cooking time: 20-25 minutes
Serves 6

Spicy Tomato and Pea Soup Ingredients:

5 large very ripe tomatoes, chopped
1 large onion, thinly sliced
2 cups water
2 tbsp ghee or butter
1 clove garlic, crushed
2 tsp ground cumin
2 tsp ground coriander
1/2 tsp fennel seeds
2 bay leaves
1 green chilli, seeded and sliced
1 tbsp chopped fresh mint
1 tbsp sugar
1 1/2 cups frozen peas
1 1/2 cups coconut cream

Spicy Tomato and Pea Soup Cooking Instructions:

1. Simmer the tomato in the water until very tender. Blend the tomato and water in a food processor.

2. Heat the ghee or butter in a large pan. Add the onion and garlic. Cook over medium heat until very soft. Add the coriander, cumin, fennel seeds, bay leaves and chilli. Cook and stir for 1 minute.

3. Add the coconut cream and the pureed tomatoes and bring to the boil. Reduce the heat and add the peas. Cook until tender. Remove the bay leaves and add the sugar and mint. Season with fresh ground pepper to taste. Serve hot.
