Stir-Fried Chicken with Chilli and Basil Recipe
This is a quick and easy to prepare chicken dish with fiery chillies partnering the holy basil that gives a pungent spicy flavor.
Serves 4-6
Stir-Fried Chicken With Chilli And Basil Recipe Ingredients:
450g skinless, boneless chicken breast portions
4 garlic cloves, sliced thinly
3 tablespoons vegetable oil
2-4 fresh red chillies, seeded and finely chopped
2 teaspoons dark soy sauce
3 tablespoons Thai fish sauce
1 teaspoon granulated sugar
2 fresh red chillies, seeded and finely chopped, to garnish
10-12 holy basil leaves
About 20 deep-fried holy basil leaves, to garnish
Stir-Fried Chicken With Chilli And Basil Recipe Cooking Instructions:
1. Cut the chicken breasts into bite-size pieces. Heat oil in the wok and add the garlic and chillies. Stir-fry over a medium heat for 1-2 minutes until the garlic is golden brown. Do not let the garlic burn or it will taste bitter.
2. Add the chicken pieces to the wok then stir-fry until color changes. Stir in the fish sauce, soy sauce and sugar. Stir-fry the mixture for 3-4 minutes or until the chicken meat is fully cooked.
3. Stir in the fresh basil leaves. Spoon the mixture onto a warm serving platter or individual serving dishes. Garnish with the chopped chillies and deep-fried basil. Serve immediately.
