Maja Blanca Recipe
This delicious Maja Blanca is a favorite dessert among Filipinos. Great choice to serve in parties with multi-cultural setting.
Maja Blanca Ingredients:
750g corn kernels
2 liters coconut cream
2 tbsp condensed milk
1 pc egg yolk
175g cornstarch
150g sugar
2 tbsp butter
1 tsp pandan essence
Maja Blanca Cooking Procedure:
1. Mix corn, coconut milk. condensed milk, sugar, butter, pandan essence and cornstarch in a saucepan until smooth. Cook over moderate heat for about 30 minutes. Stir constantly. Whisk in the egg yolk then remove from heat.
2. Pour over in a mold or container. Chill then serve topped with latik.
Latik Ingredients:
1 2/3 cup coconut cream
2 tbsp sugar
salt
Latik Cooking Procedure:
1. In a non-stick pan, mix sugar, a pinch of salt and coconut milk. Stir until sugar and salt is dissolved. Bring to boil then reduce heat. Simmer until oil comes out and coconut residues form (the latik) at the bottom.
2. Stir frequently to avoid burning. Fry the latik in its oil until golden brown. Remove from oil with slotted spoon. Serve with suman or garnish on top of a Maja Blanca.
