Serves 4

Hot and Sweet Vegetable and Tofu Soup Ingredients:

1-2 tsp Thai red curry paste
5 cups vegetable stock
juice of lime
2 kaffir lime leaves, torn
1 carrot, cut into thin batons
3 tbsp palm sugar or light muscovado (brown) sugar
50g baby spinach leaves, remove any coarse stalks
225g block silken tofu, diced
2 tbsp soy sauce

Hot and Sweet Vegetable and Tofu Soup Cooking Instructions:

1. In a large pan, heat the vegetable stock. Add the red curry paste and stir constantly over a medium heat until the paste has dissolved.

2. Add the lime leaves, sugar and soy sauce and bring to the boil.

3. Add the lime juice and carrot to the pan. Reduce the heat and simmer for 5-10 minutes. Place the spinach and tofu in four individual serving bowls then pour the hot stock on top to serve.
